One pot, with the right amount of liquid

One-pot cooking works when liquid, starch, heat, and pan size are balanced. Pasta and rice absorb liquid as they cook, while beans and vegetables release moisture. Follow the vessel size and simmer level before deciding that the dish needs more broth.

Stir often enough to prevent sticking but not so aggressively that rice or beans break down. Dairy and cheese usually belong near the end over gentler heat. If a sauce is loose, rest it briefly before adding extra starch because many one-pot dishes thicken off the burner.
