This is moussaka's flavors without the béchamel or the layering: browned eggplant, cinnamon-scented turkey and bulgur cooked in the same pan, with feta scattered over at the end instead of a baked topping.

Browning the eggplant separately and returning it late is what keeps the cubes recognizable in a wet tomato sauce.
The feta goes on in rough chunks and stays there, so spooning portions out without stirring keeps the creamy pockets intact.
Toss 1 eggplant (450 g), cubed, with 1 tbsp of the 2 tbsp (30 ml) olive oil and half the 1 tsp (6 g) salt. Brown the cubes in the deep oven-safe skillet in two batches, 5 to 7 minutes each, then set them on a plate.

Add the remaining oil and 1 onion (180 g) and cook 4 minutes. Add 1½ lb (680 g) ground turkey with 1 tsp (1 g) oregano, ¼ tsp (0.5 g) cinnamon, 3 garlic cloves (15 g), and the rest of the salt, crumbling it until the meat reaches 165°F (74°C).

Stir in 1 can (411 g) crushed tomatoes and the browned eggplant and simmer 5 minutes. The cubes should drink up the spiced turkey-tomato sauce while still holding their shape and dark edges.

Add 1 cup (180 g) bulgur and 1½ cups (360 ml) chicken broth, bring it to a boil, then cover and drop to low. Cook 12 to 15 minutes, until the bulgur swells and turns tender.

Uncover and rest the skillet 5 minutes. If liquid still stands at the edge, simmer it off briefly; if the grain is firm in the middle, work in hot water 2 tbsp at a time.

Scatter 4 oz (113 g) feta in rough chunks across the surface and finish with ¼ cup (15 g) parsley. Spoon portions straight from the skillet without stirring the creamy cheese down into the tomato base.

The turkey holds 165°F (74°C), the bulgur is tender, and the eggplant cubes keep their browned edges. If the bulgur is firm in the middle, work in hot water 2 tablespoons at a time; if liquid stands at the edge, simmer uncovered for a minute or two.
Crush the dried oregano between your palms into the hot pan with the cinnamon, about 20 seconds before the tomatoes go in.
