“The rice cooks undisturbed; shrimp catches the final steam.”
Adding shrimp late prevents rubbery seafood while the rice absorbs tomato broth.
The rice has to be left alone and the shrimp have to arrive late, and those two rules cover almost everything that can go wrong. Sixteen minutes covered without a stir, then five to seven more with the shrimp laid on top of nearly finished grain.

“Season and chill the shrimp” starts Shrimp Jambalaya Skillet in the deep 12-inch skillet with lid: pat the shrimp dry and season with half the salt, half the smoked paprika, and the cayenne; refrigerate them on a covered plate while the jambalaya rice cooks so they are not exposed to the full simmer. During “Add shrimp for the final steam,” arrange the seasoned shrimp over the rice, cover again, and steam 5–7 minutes; check the largest shrimp for 145°F (63°C) and an opaque center; remove the pan promptly so the shrimp stay springy.
“Rest, fluff, and finish” closes Shrimp Jambalaya Skillet: rest the covered skillet off heat for 5 minutes; fluff the rice gently around the shrimp, then scatter with scallions and parsley before serving; give the pause its full length so the rice and shrimp settle before portioning.
Pat 1½ lb (680 g) peeled deveined shrimp dry and season them with half the 1 tsp (6 g) salt, half the 1 tsp (2 g) smoked paprika, and ¼ tsp (0.5 g) cayenne. Refrigerate them covered while the rice cooks.

Heat 2 tbsp (30 ml) oil in a deep skillet and cook 1 diced yellow onion (180 g), 1 diced red bell pepper (170 g), and 2 diced celery ribs (100 g) 6 to 8 minutes, until softened. Stir in 3 minced garlic cloves (15 g), 1 tsp (1 g) thyme, and the rest of the paprika for 30 seconds.

Stir in 1½ cups (300 g) rinsed long-grain rice and toast it 1 minute, then add 1 can (411 g) diced tomatoes with their juices, 2½ cups (600 ml) chicken broth, and the remaining salt. Scrape the pan and bring it to a steady simmer.

Cover tightly, drop the heat to low, and cook 16 to 18 minutes, until the rice is nearly tender and most of the liquid has been absorbed. Leave it alone, because stirring now turns jambalaya gummy.

Arrange the seasoned shrimp over the rice, cover again, and steam 5 to 7 minutes. The largest shrimp should be opaque through the center and register 145°F (63°C); take the pan off promptly so they stay springy.

Rest the covered skillet off the heat for 5 minutes, then fluff the rice gently around the shrimp with a fork. Scatter 3 sliced scallions (45 g) and ¼ cup (15 g) parsley across the top.

The rice is tender and separate with no loose broth in the pan, and the shrimp curl into firm pink commas. After “Season and chill the shrimp,” if long-grain rice remains firm, add hot liquid in small amounts; if the sauce is thin, move shrimp to a clean plate and reduce it.
Half the smoked paprika goes on the shrimp and half into the hot oil with the garlic, so the smoke reaches the dish from two directions.
