“Hot broth and a tight foil seal cook the rice.”
Nothing is cooked on the stove here. Dry rice, two cans of beans, corn and tomatoes go into one dish, hot broth goes over the top, and the foil does the rest.
The seal is what makes this work. Foil crimped hard against the rim traps the steam that cooks the grains, and every lift of a corner costs liquid that has not yet been taken up.
🌽 The promise: Every grain is tender with no chalky core, the cheese top is blistered, and a lifted square holds its shape.

During “Bake without opening,” use this checkpoint for Black Bean Corn Rice Bake: bake at 375°F (190°C) for 30 minutes without opening, then check that rice is tender.
Use “Rest before lime and scallions” to reach the final cue—rice is tender and separate, the center reaches 165°F (74°C), and no broth remains below—and stop there.
Set the oven to 375°F (190°C). Tip 1½ cups (278 g) rinsed long-grain white rice into a 9-by-13-inch baking dish and toss it with 2 tsp (4 g) chili powder, 1 tsp (2 g) ground cumin, and 1 tsp (6 g) kosher salt until every grain is dusted.

Scatter 2 cans (425 g each) rinsed black beans and 1 cup (165 g) frozen corn across the seasoned rice, then pour over 1 can (411 g) diced tomatoes with all their juice. Rake the mixture level so the grains sit in one even bed.

Pour 3 cups (720 ml) hot vegetable broth evenly across the dish until the liquid sits just level with the surface. Cover tightly with foil, crimping the edges hard against the rim so no steam escapes during the long bake.

Bake covered for 35 minutes without lifting the foil. The rice needs that trapped steam to swell, and every peek costs liquid the grains have not yet absorbed. Set a timer rather than guessing at the halfway point.

Pull off the foil and press a few grains against the dish; they should be tender with no chalky core. Scatter 2 cups (226 g) shredded Monterey Jack over the top and return it uncovered for 6 to 7 minutes until blistered.

Squeeze 2 tbsp (30 ml) lime juice across the molten cheese and shower on ½ cup (60 g) sliced scallions. Let the bake settle for 5 minutes before scooping so each portion holds its shape on the plate.

The rice is fluffy and separate, the cheese is browned in patches, and no broth pools when a square is lifted out. At “Bake without opening,” bake at 375°F (190°C) for 30 minutes without opening, then check that rice is tender; adjust ingredients only after comparing the batch with the cue that rice is tender and separate, the center reaches 165°F (74°C), and no broth remains below.
Toss the dry rice with the chili powder and cumin before any liquid goes in, so every grain is coated rather than the spice floating on top.
