“Everything stuck to the pan becomes the dressing.”
The dressing is made in the pan the mushrooms browned in, so everything stuck to the bottom ends up on the leaves rather than in the sink.
Nothing here cooks for long, and the spinach is barely cooked at all: the warm beans and dressing are poured over and tossed for 30 seconds, which relaxes some leaves and leaves others raw.
🍄 The promise: A warm dinner salad for four, built in one skillet in a little over half an hour and meant to be eaten within minutes of tossing.


Browning in two batches is the only way a pound of mushrooms gets dark edges in a single skillet.
The goat cheese and walnuts go on after the tossing, so they sit on top rather than smearing through the leaves.
Pat the quartered cremini mushrooms dry, then brown them in 1 tbsp (15 ml) of the olive oil in two batches, 7–9 minutes total, until the edges are dark and the pan sounds dry. Tip them onto a plate.

Add the remaining oil and the thinly sliced shallot and cook 3 minutes, until limp and golden at the tips. Stir in the minced garlic for 20 seconds, no longer, so it does not turn bitter.

Add the rinsed cannellini beans and toss them 2 minutes, just until they are warm and glossy with pan juices. Move gently; hard stirring at this point breaks the skins and clouds the dressing.

Lower the heat and whisk the sherry vinegar, Dijon mustard, salt, and black pepper straight into the pan juices, scraping up anything stuck. The dressing will thicken and smell sharply of vinegar.

Pour the warm beans and dressing over the baby spinach and toss for 30 seconds, just long enough for some leaves to relax and others to stay raw. Residual heat does all the work here.

Pile the browned mushrooms over the salad and finish with the crumbled goat cheese and toasted walnuts. Bring it to the table right away, while the leaves are half-wilted and the mushrooms still warm.

The mushrooms carry dark browned edges, the spinach is partly wilted rather than limp, and the beans stay whole. If water pools at the bottom of the bowl, the mushrooms went in damp; lift the salad out with tongs and leave the liquid behind.
Deglaze the hot pan with a tablespoon of the sherry vinegar and scrape up the browned bits before the rest of the dressing goes in.
