“High heat gives the edges a grill-night personality.”
A home sheet pan cannot copy a rotating shawarma spit, but thin thigh strips, a hot metal surface, and generous spacing produce deeply caramelized corners.
Onion and pepper roast beside the chicken while a cold yogurt sauce stays away from raw poultry. Warm spices and cool lemon create the essential contrast.
🥙 The promise: Chicken is juicy with dark irregular edges; peppers bend without collapsing and onions are sweet inside.

Thin strips and open metal reproduce the browned-edge effect that defines spit-roasted shawarma.
Cold yogurt and fresh cucumber balance concentrated roasted spices.
Heat the oven to 450°F (230°C) and mix 3 tbsp (45 ml) olive oil with 2 tsp (4 g) ground cumin, 2 tsp (4 g) ground coriander, 1 tsp (2 g) smoked paprika, ½ tsp (1 g) turmeric, ¼ tsp (0.5 g) cinnamon, two-thirds of 3 garlic cloves (15 g), 1 tsp of the salt, and 2 tbsp lemon juice.

Coat 1½ lb (680 g) chicken thighs, cut into 1-inch strips, with half the spice oil in one bowl. Toss 1 wedged red onion (220 g) and 2 sliced bell peppers (340 g) with the rest in another, then wash your hands and any tool that touched raw chicken.

Spread everything over a large rimmed metal sheet pan in one layer with no overlap, turning the broadest chicken faces down against the metal. Crowding steams the strips instead of charring their edges.

Roast 18 minutes, turn everything with a spatula, and roast 5 to 8 minutes more. The edges should darken unevenly and the thickest chicken strip must register 165°F (74°C) at its center.

Whisk ¾ cup (180 g) Greek yogurt in a clean bowl with the remaining garlic, the rest of the lemon juice, and the last of the 1½ tsp (9 g) kosher salt. Fold in half of 1 diced cucumber (200 g) and keep it cold.

Move the chicken to a clean platter and rest 5 minutes so the juices settle. Serve with ¼ cup (15 g) parsley, the remaining cucumber, 4 warmed pita breads (240 g), and the cold yogurt sauce.

The chicken is juicy with dark irregular edges, the peppers bend without collapsing, and the onion turns sweet. If poultry finishes before vegetables, move it to a clean platter and continue the vegetables alone.
Warm cumin and coriander in a dry skillet for 20 seconds, stopping as soon as they smell fragrant.
