Tostadas made from bought shells are usually stale and always expensive. Twelve corn tortillas brushed with oil and baked give the same snap for a fraction of the price, and the oven is on for the cheese anyway.

Toss 2 cups (140 g) shredded cabbage with 2 tbsp (30 ml) lime juice, then pile it over the hot tostadas with 1 cup (160 g) tomato salsa and 1 diced avocado (200 g). Bring them to the table at once.

The shells stay audibly crisp under the topping, the beans are hot through, and the cabbage keeps its raw crunch.
