“Spice the potatoes before the broth, not after.”
Everything that makes this taste of more than its ingredient list happens in the first eight minutes, before any liquid goes in: onion softened properly, spices toasted into a paste, potato coated in it.
The potatoes and the chickpeas do not go in together. Potatoes need 15 minutes of simmering, canned chickpeas need 8, and any longer and their skins split into the gravy.
🥔 The promise: Potato cubes pierce cleanly, chickpeas remain intact, and gravy lightly coats both.


Coating the potato cubes in the toasted spice paste seasons them through rather than just seasoning the gravy around them.
The spinach wilts in residual heat and the lemon goes in with the burner off, which keeps the color and the edge.
Warm 2 tbsp (30 ml) neutral oil in a 5-quart Dutch oven and cook 1 diced yellow onion (180 g) for 7 minutes, until the edges turn translucent and gold. Stir in 1 tbsp (8 g) grated ginger and 3 minced garlic cloves (15 g) for 30 seconds.

Sprinkle in 1 tbsp (8 g) mild curry powder and 1 tsp (2 g) ground cumin and stir constantly for 30 seconds. The spices should smell toasty and cling to the onions in a dark paste, not scorch on the pan floor.

Add 1½ lb (680 g) Yukon Gold potatoes in ½-inch cubes and stir for 1 minute so every surface picks up color from the spice paste. The cubes will look dusty gold and start to smell sweet.

Pour in 1 can (411 g) diced tomatoes and 3 cups (720 ml) vegetable broth, add 1 tsp (6 g) kosher salt, and simmer partly covered for 15 minutes. A knife tip should meet slight resistance in the largest cube.

Tip in 2 cans (425 g each) rinsed chickpeas and simmer 8 minutes, until the gravy thickens enough to coat a spoon. Fold 2 cups (60 g) baby spinach through in handfuls and let it wilt to dark ribbons.

Cut the heat, stir in 2 tbsp (30 ml) lemon juice, and let the curry rest 5 minutes so the flavors settle. Taste and add a pinch more salt if the tomatoes have flattened the edge.

Potato cubes pierce cleanly, the chickpeas stay whole, and a glossy gravy coats both. If the curry is thin, crush a cup of chickpeas against the side of the pot and simmer uncovered; if it is thick, loosen it with hot broth rather than water.
Stir ½ teaspoon of garam masala through the curry off the heat, after the lemon; added earlier it simmers away.
