Mommy Porter built this around leftover rotisserie chicken and a picky eater who suddenly wasn't so picky anymore. It's become the default answer to 'what's for dinner' on nights nobody has a better idea.

  1. Season the chicken: Toss shredded chicken with taco seasoning until coated.
  2. Assemble: Spread butter on one side of each tortilla. Layer cheese and chicken on the unbuttered side of half the tortillas, then top with remaining tortillas, buttered side out.
  3. Cook: Cook quesadillas in a skillet over medium heat 2-3 minutes per side until golden and cheese is melted.
  4. Serve: Cut into wedges and serve with sour cream and salsa for dipping.
