This is Mommy Jeff's answer for nights that call for something lighter without feeling like a compromise. Mild cod makes it an easy way to bring more fish into a week that's usually all chicken.

  1. Prep the vegetables: Toss chopped vegetables with 2 tbsp olive oil, garlic, salt, and pepper on a sheet pan. Roast at 400°F (200°C) for 10 minutes.
  2. Add the cod: Push vegetables to the sides. Add cod fillets, drizzle with remaining oil, and top with lemon slices, thyme, salt, and pepper.
  3. Bake: Bake 12-15 minutes more until cod flakes easily with a fork and vegetables are tender.
  4. Serve: Sprinkle with fresh parsley and serve straight from the pan.
