Mommy Jeff built this recipe around one simple rule: dinner should let everyone build their own plate without anyone having to cook two separate meals. The toppings bar does all the negotiating so you don't have to.

🧺 Ingredients

👩‍🍳 Instructions

  1. Brown the turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey, breaking it apart, and cook until no longer pink, about 6-7 minutes.
  2. Season: Stir in taco seasoning and 2-3 tbsp water. Simmer 2 minutes until well coated and slightly saucy.
  3. Warm the beans and corn: In a small pot, warm black beans and corn together for 3-4 minutes, or microwave until heated through.
  4. Build the bowls: Divide rice among bowls. Top with turkey, beans, corn, lettuce, tomatoes, avocado, and cheese.
  5. Serve: Finish with a dollop of sour cream and a squeeze of lime. Let everyone customize their own bowl.

💡 Chef's Tip

Set out toppings buffet-style so kids can build their own bowl — it turns dinner into a fun activity instead of a negotiation.
