  1. Prep the oven: Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
  2. Roast the potatoes first: Toss potatoes with 1 tbsp olive oil, salt, and pepper. Roast 10 minutes to get a head start.
  3. Add everything else: Push potatoes to one side. Add salmon, broccoli, and tomatoes to the pan. Drizzle with remaining olive oil and melted butter mixed with garlic, oregano, salt, and pepper.
  4. Roast until flaky: Top salmon with lemon slices and roast 10-12 minutes until salmon flakes easily with a fork.
  5. Finish and serve: Squeeze fresh lemon juice over everything, sprinkle with dill or parsley, and serve straight from the pan.
